Milk Free and Egg Free Spinach and Banana Muffin

I have been obsessed making Cai some bento meals before I go to work lately.

I’ve joined this group on Facebook called LunchBox Mums a few months back and I just recently saw that group again so I checked it out. Scrolling through all their beautiful bento meals inspired me to do the same. So, you know when you just got paid and spend irresponsibly? That’s what happened to me! I got sooo hooked with their photos that I bought exactly the same bento box they were using, My Munchbox. When I checked their website, it said there that they’re sold out. So, I still tried and messaged their FB page. Long story short, I got what I wanted with a few other extras 😜. On top of that, I was given a discount code. Sweet huh!

When I got home Tuesday last week and I saw the box, my eyes lit up with excitement and my soul sang in joy! Hahah!

I downloaded their template and began planning the week, er the next day’s bento meal!

These were all the meals I prepared since I started

Wednesday: Wholegrain Cheerios, Strawberry Skewers, Toast and Avo Puzzles, Mandarin Slices, Celery Sticks, Carrot letter (tried spelling CAI ILY), Fruit Juice

Thursday: Filo Tasty Bread , Eton Crackers, Wholegrain Cheerios, Toast and avo puzzles, Strawberry Skewers, Watermelon slices, Banana (Not in photo: Heinz Oats and Apple)

Friday: Wholegrain Cheerios, Toast & Avo Lions, Banana & Toast Bears, Banana, Fruit bar, Mandarins, Sliced Strawberries

Monday: Homemade Egg Free & Milk Free Banana Muffin (the other one is Banana and Blueberry Muffin), Boiled Golden Sweet Potatoes, Wholegrain Cheerios, Mandarin, Strawberries, Fruit bars (Not in photo: Heinz Creamy Banana Porridge)

Tuesday: Strawberries, Blueberry and Banana Muffin, Strawberry Banana Muffin, Nutrigrain, Fruitbars, Mandarin (Not in photo: Heinz Creamy Banana Porridge)

Wednesday: Blueberry Banana Muffins, Fruit Loops, Sun gold Kiwi, Mandarins, Strawberries

Thursday (TODAY): Sun gold Kiwi, Hulk Muffins (Spinach and Banana Muffin), Fruit Loops, Rock melon Skewers, Mandarin, Carrots Sticks (Not in Photo: Heinz Apple and Berry Muesli)

Milk Free Egg Free Spinach and Banana Muffin

Ingredients

DRY Ingredients:
1 cup Plain flour
1 cup Self-raising flour
1 1/2 teaspoon Cinnamon
2 teaspoom Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Salt

WET Ingredients:
3/4 cip Water
1/2 cup Honey
1 large Overriped Banana
6 ounce Spinach (But I just used 2 handfuls or until the mixture’s green enough for me)
1/2 cup Oil
3 tbsp Apple Sauce
1 teaspoon Vanilla Extract

Directions

1. Preheat oven to 150 Degrees Celsius. Spray Muffin pan with Cooking oil
2. Sift and combine all dry ingredients in a large mixing bowl.
3. Mix all wet ingredients in a blender, Nutribullet, or food processor until completely pureed.
4. Pour the wet ingredients onto the dry ingredients and mix.
5. Spoon the batter onto the greased muffin pan and bake for 15-20 minutes until muffins are cooked through.
6. Wait to cool before serving

You can call this as Hulk Muffins, PJ Mask Muffin, (if it were my time, this will be called Popeye muffin) or whatever green character your toddler currently loves.

The main purpose why I’m doing this is because… I’ve been feeling guilty.  Although working full-time meant we’ll have a bit more money to finance Cai’s future, it also meant spending less time with him. I can’t feed him lunch nor play with him for 8 hours. I can’t see his smiles for 8 hours, nor hear his laughs nor hear him snore. Small things that matter and I can’t be there.

I wanted to do this partly because I want to make sure of what he’s eating when I’m away. This is the only form of ‘bond’ I still get whilst I’m at work.
