Crustless Mini Quiches

The first time I tried one of these was when one work mate brought this for morning tea. I really liked it but was too shy to get another serving. The next time Mel made some, I didn’t hesitate anymore as it was really good! So… I had two servings of her quiches. I couldn’t help myself so I asked her for the recipe. Call me a little too excited but I went ahead and searched recipes online without her giving her recipe yet. I found that it really depends on what you want in your quiche. 

Today, I tried my own version of crustless mini quiche moreso known as egg muffin. 

In a pan sprayed with EVOO, I sautΓ¨d onion, capsicum, mushroom, bacon bits, and chopped baby spinach and rocket. 

   
    
   
Pre-heat the oven at 180 degrees Celsius while you prepare the muffin pan. 

Grease with EVOO spray. Divide mixture into 12 equally. 

  
Add cottage cheese. 

  
Beat 4 whole free range eggs and pour over each muffin cup. 

  
Bake for 10-20 minutes or until eggs are cooked. 

  
After 20 minutes…
