Chicken, Broccoli and Mushroom Stir-fry

First you have to marinade the chicken in teryaki sauce and calamansi (lemon) for 20 minutes or more. You can use that 20 minutes to fold clothes or like what I did, I ate dinner.

As always, start off with EVOO and garlic. I wanted it a bit spicy so I added two chopped fresh chillis as I sautéd the garlic.

Add in the chicken and let it simmer for 15 minutes or so or just until the teryaki sauce is gone.

Add the mushrooms. Cover the pot for 5 minutes then add in broccolis and green capsicum.

Cover for 2 minutes then add your onions.

Portion into containers with brown rice and red quinoa and voila! Lunch (for tomorrow) is ready!

Of course I made two for me and my husband’s (who by the way, inisisted to do the mixing) baons.
