Meal Prep: First timer

My boyfriend introduced me to this account he’s been following on Instagram. It’s called FitMenCook. I followed Kevin and watched his videos. All of his recipes are easy and healthy. Since then, I’ve been hooked to watching videos on food prep and meal preps for a week and I thought, maybe I could do the same. This way, I’ll just have to prepare them every Sunday evening and I’ll be eating healthy and clean the whole week!

Today I did it! I prepared my lunch and dinner (I always eat breakfast at home since my work starts at Lunch) for 5 days. All the ingredients are listed down below. If you’re interested, just keep reading.

Ingredients:
For Lunch
Chicken with Mixed Veggies and Baked Sweet Potatoes

Sweet Potatoes
Frozen Mixed Veggies
Chicken breast fillet

For Dinner
Garden Salad

Lettuce
Grapes
Carrots
Cucumber
Apple

Procedure:
1. Pre-heat oven at 200 degrees.

2. Peel the sweet potatoes and then cut them into wedges. Put them in a tray, spray with extra virgin olive oil. Sprinkle with garlic salt, cayenne pepper, chili powder. Bake for 20 minutes or so.

3. Clean chicken. Slice into thin strips. Marinade in calamansi, oyster sauce, barbecue sauce. Set aside.

4. Clean lettuce and tear into small pieces. You may also already wash the grapes. Slice apples, carrots, and cucumber into small pieces. Portion into 5 containers.

As you can see, I sliced the apples, carrots, and cucumber into smaller pieces only for what I will eat tomorrow. The rest of the carrots, apples, and cucumbers in the other containers will still have to be cut into smaller pieces in the coming days. This is to avoid these ingredients from drying out.

My salads are done and ready to be stacked in the fridge.

5. Cook the frozen mixed veggies in olive oil and medium heat. Should be done in 10 minutes or less.

6. Your potatoes should be done by now. Portion them into 5 containers.

7. Add in your veggies

8. In the same pan where you cooked your veggies, spray a few extra virgin olive oil. Add in your marinated chicken and let it simmer for 10 minutes until the marinade is dry. Add a few chopped garlic on top then cover pan. Add in to your containers once cooked.

This is my first time to prepare my meals for a whole week and since I’m under a tight budget, I’d like to share with you how much it cost me to prepare all these.

For Lunch
Chicken with Mixed Veggies and Baked Sweet Potatoes

Sweet Potatoes- Php 20.00
Frozen Mixed Veggies- Php 53.50
Chicken breast fillet Php 69.17
Total: Php 142.67 (Php 28.53 per serving)

For Dinner
Garden Salad

Lettuce – Php 81.76
Grapes – Php 66.67
Carrots – Php 15.71
Cucumber – Php 11.62
Apple – Php 46.89
Total: Php 223.65 (Php 44.73 per serving)

So my Lunch Php 28.53 + Dinner Php 44.73 is Php 73.26 per day ( Php 366.30 per week). If I keep this up, not only will I be eating healthy and clean, I can save heaps too!
